What You'll Need

  • 1 Pack of Auntie Jodi's  Pumpkin Pie kit
  • 1 Can (380ml) of Evaporated Milk
  • 2 Eggs
  • 1 cup (250ml) of boiling water
  • Unbaked pastry shell

The Steps to Perfection

Now that you have all your ingredients ready, let's get started on baking the perfect pumpkin pie:

Step 1: Preheat and Prepare

Preheat your oven to 165°C. While the oven is heating up, roll out your pie crust and place it in a 9-inch pie dish. Crimp the edges to create a decorative border. You can either make your pie crust at home, or buy frozen pastry sheets from your local grocer.

Step 2: Mix the Filling

In a large mixing bowl, add 1 & 1/4 cup (232g) of Auntie Jodi's Pumpkin Pie pre-made mix in a bowl, then add the boiling water. Beat the pie mix, using an electric mixer if needed, until smooth consistency.

Step 3: Add in the required ingredients 

Mix in the eggs and evaporated milk.

Gently pour the pumpkin filling into the prepared pie crust. Carefully transfer the pie to the preheated oven and bake for 15 minutes. Then, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 30-40 minutes, or until the filling is set and test poke the center with a fork, be sure it comes out clean. 

Step 4: Cool and Serve

Once the pie is done baking, remove it from the oven and let it cool completely on a wire rack. This will allow the filling to settle properly. To have the pie set, you can leave it in the fridge overnight to cool.  Once cooled, slice into beautiful wedges and serve with a dollop of whipped cream or a scoop of vanilla ice cream.
